मेथांबा - कैरी चा

Many a times, you get mangoes and after cutting and tasting it, you find it a bit sour to eat them raw. So then what to do? 

मेथांबा - Methamba is the answer. As the name suggests, methi seeds / fenugreek is a must to prepare this recipe.

To prepare this dish, we need the following ingredients:

1. 1 cup mango pieces
2. 2 table spoon oil
3. 1 tea spoon mustard seeds 
4. 2 table spoon fenugreek seeds/methi dane
5. 2 chopped green chilies
6. 10 separated curry leaves/kadhi patta
7. 1/2 tea spoon Asafoetida हींग
8. 1/2 tea spoon turmeric
9. 1 tea spoon red chili powder
10. 4 table spoon crushed jaggery / gud or as per taste
11. Salt to taste 

Preparation:
Cut mango into pieces by slicing it as shown in the picture, we do not need exact square or so. Also use the seed in the mango.

Method: 

1) Heat oil in a thick bottom pan.

2) Add mustard seeds, let it pop

3) Add fenugreek seeds fry until brown

4) Add Asafoetida हींग, then add chopped green chilies, curry leaves/kadhi patta, let them get fried a bit and add turmeric and lastly red chili powder.

5) Now add the cut mango pieces and mix well as shown in the picture.

Cover it for 5 minutes and now add salt to it and mix well. Let it cook for another few minutes, you will see the colour change (it becomes transparent). Now add jaggery to it and again mix well and let it be on heat for few minutes. Once done, the methamba
looks as seen in the picture.

This is eaten as a side dish with chapati.
