Tikhat Sanza @ Uppit @ Upama......evolution of upama





There is a subtle difference in the making of tikhat sanza / uppit and upama.

Basically roasting of rava / semolina  is important for making tikhat sanza / uppit and upama. Rava used for this is of the coarse variety. Rava must be roasted with care as it should not get burnt, so here you need to keep shifting with the spatula while on heat or you get ready roasted rava packets in the store.

Thikat Sanza is colour as you add halad/ turmeric powder and Upama is white in colour except red whole chili no powder is added. Thikhat Sanza doesnot have any vegetables except kanda, whereas in upama, we can add french beans, carrots, tomatoes (optional), green peas along with kanda. Also it is garnished with coriander leaves and grates coconut.

For making 'Tikhat Sanza', you just need onion /kanda, hirvi mirchi/ green chilies, laal tikhat / chilli powder, halad / haldi/ turmeric and rava. This is a traditional warhadi dish and famous breakfast item. Warhad must have been basically a very dry place and so most of our dishes don't include any combination of vegetables. Also any dish that is salty has lot of spice or ret hot pepper / chili powder. prepare

Tikhat sanza / uppit
Ingredients: for a cup of rava, take oil, mustard seeds, 2 green chilies (less if you donot like it hot), 1/2 tea spoon turmeric powder/ halad, 2 tea spoon chili powder/tikhat, 1/2 kanda /onion (medium size), salt.

Method: Heat oil in a thick bottom pan, add mustard seeds, let it crackle then add chopped kanda/onion and chopped green chilies, mix well and let it cook until it turns pink and transparent. Once done add turmeric powder/ halad and chili powder/ tikhat. Add the roasted rava and mix well. Add salt. Now add 2 cups of boiled water and cover it. Let it cook for few minutes on simmer heat. Serve hot.

Upama
Upama is a urban version of tikhat sanza / uppit. The concept is basically same and even the method is almost same. I am saying almost here for the preparation method, because the last step differs when it comes to adding water. So once your phodani i.e  the main mix of  oil, mustard seeds, chilies, kanda /onion, curry patta and vegetables is done, you can add rava and later hot water the required quantity to this mix OR you add your water first let it boil with the mix and then add rava.

Another important point is always add dry ingredients like red chili, pea nuts, dry coconut pieces first in the hot oil and then add kanda and other vegetables.  


Upama made from rava

With globalization, oats has been introduced to us and I have made 'upma' of oats.

Ingredients: for a cup of oats (rava in regular upama), take oil, mustard seeds, 1 table spoon udad dal, red whole chili, 1/2 pea nuts (optional), few curry leaves, 1/2 kanda /onion (medium size), mix of vegetables like french beans and carrots 1/2 cup (optional), 1 tomato chopped (optional).

Method: Heat oil in a thick bottom pan, add mustard seeds, let it crackle then add udad dal, red chili pieces, pea nuts and fry until brown, then add chopped kanda/onion and vegetables mix well and let it cook until the raw crunch is gone, then add roasted oats and mix well. Now add 1 and 1/2 cups of boiled water and cover it. Let it cook for few minutes on simmer heat. Garnish with coriander and grated coconut. Serve hot.
